Step 1 — Sauté the Aromatics

Heat the olive oil in a large skillet over low heat. Add the finely chopped onion and the diced smoked pancetta. Cook gently, stirring occasionally, until the onion is translucent and the pancetta has rendered its fat — about 8 to 10 minutes.

Low and slow is key here. Rushing this step at high heat will burn the onion and toughen the pancetta. You want the fat to render gently, not fry.

Step 2 — Simmer the Sauce

Add the tomato passata, a generous pinch of salt, and 1 fresh basil leaf to the skillet. Stir to combine. Reduce the heat to the lowest possible setting — the sauce should barely bubble, not boil.

Cover partially and let it simmer for 40 to 50 minutes, stirring every 10 minutes or so. The sauce will darken, thicken, and concentrate in flavor.

This long, gentle simmer is the signature of the Italian version. Unlike quick American-style penne alla vodka (10-minute sauce), this method extracts deep sweetness from the tomatoes and allows the pancetta fat to merge fully into the passata.

Step 3 — Cook the Pasta

About 8 minutes before the sauce is ready, bring a large pot of generously salted water to a rolling boil. Cook the penne according to package directions until firmly al dente — about 1 minute less than the suggested time.

Reserve 1 cup of pasta water before draining.

Step 4 — Deglaze with Vodka

Remove the basil leaf from the sauce. Increase the heat to medium and pour in the vodka. Let it sizzle and bubble vigorously for 2 to 3 minutes, until the alcohol has evaporated and the sauce smells fragrant rather than sharp.

The vodka doesn't make the dish taste boozy — it releases flavor compounds in the tomatoes that are alcohol-soluble but not water- or fat-soluble, making the tomato taste more intensely like itself.

Step 5 — Add the Cream

Reduce the heat to low. Pour in the heavy cream and stir until the sauce turns a warm salmon-pink color. Taste and adjust salt as needed.

Step 6 — Mantecatura (The Emulsion)

Add the drained penne directly to the skillet with the sauce. Add the knob of butter and ½ cup of the reserved pasta water.

Toss vigorously over low heat for 45 to 60 seconds. The butter, starch from the pasta water, and cheese (when added) will create a silky, clingy emulsion that coats every piece of penne.

If the sauce seems too thick, add more pasta water a tablespoon at a time until it flows like a creamy blanket.

Step 7 — Serve Immediately

Divide among warm bowls. Top with a generous dusting of grated Parmigiano-Reggiano.
