These spring rolls skip the deep-fryer without sacrificing a bit of crunch. The secret is a two-stage air-fryer method: a low-temperature cook to set the wrapper and cook the filling through, followed by a high-temperature blast that shatters the exterior into a golden, brittle shell. The filling itself is a fast wok stir-fry — ground pork, finely shredded cabbage, carrot, and bean sprouts tossed in a sesame-soy glaze — that comes together in under 5 minutes. Once cooled, the rolls can be assembled ahead and cooked just before serving. No deep-fryer, no mess, no compromise.

Step 1 — Make the Filling

Heat the peanut oil in a wok or large skillet over high heat until shimmering and nearly smoking. Add the ground pork and spread it into a single layer. Let it cook undisturbed for 1 minute, then break it into small crumbles and stir-fry until no longer pink — about 2 minutes total.

Add the shredded cabbage, julienned carrot, and bean sprouts. Stir-fry, tossing constantly, until the cabbage is just wilted and the vegetables are still bright — about 2 minutes.

Add the soy sauce, sugar, sesame oil, and pepper. Toss to coat evenly, then cook for 30 seconds more. Remove from heat and transfer the filling to a large plate or shallow dish, spreading it out. Cool completely to room temperature — about 15 minutes. You can speed this up by placing the dish in the refrigerator for 10 minutes.

The filling must be fully cool before wrapping. Warm filling creates steam inside the roll, which breaks the wrapper during cooking and makes the rolls soggy.

Step 2 — Assemble the Spring Rolls

Place a spring roll wrapper on a clean work surface with one corner pointing toward you (diamond orientation). Spoon 1 tablespoon of cooled filling into the center of the wrapper, shaping it into a compact log about 3 inches long.

Fold the bottom corner up over the filling, tucking it snugly. Fold the left and right corners inward toward the center, pressing gently to create an envelope shape. Roll the package away from you, keeping it tight but not squeezing. Just before reaching the top, brush the remaining exposed triangle of wrapper with beaten egg white, then roll to seal completely. Place the finished roll seam-side down on a parchment-lined baking sheet.

Repeat with the remaining wrappers and filling. The rolls can be arranged close together on the baking sheet as long as they do not touch one another.

If the wrapper dries out and cracks, cover the stack with a barely damp kitchen towel while you work. Pull wrappers one at a time and keep the rest covered.

Step 3 — First Air-Fry (Set the Structure)

Preheat the air fryer to 325°F (160°C). Working in batches as needed (do not overcrowd), place the spring rolls in a single layer in the basket with at least ½ inch of space between them. Brush each roll lightly on all exposed sides with peanut oil.

Air-fry at 325°F for 5 minutes. The rolls will look pale and slightly set — the wrapper is cooked through but has not yet begun to brown. Transfer the rolls back to the baking sheet and let them cool completely, about 10 minutes.

This first stage cooks the wrapper through and firms up the structure. Skipping this step or rushing the cooling leads to rolls that burst or turn greasy in the final cook.

Step 4 — Second Air-Fry (Crisp the Shell)

Increase the air-fryer temperature to 350°F (180°C). Return the cooled spring rolls to the basket in a single layer. Air-fry for 10 to 12 minutes, turning them over halfway through, until the wrappers are deep golden brown, crackling crisp, and visibly flaky in spots.

Transfer the finished rolls to a wire rack set over a baking sheet (this prevents steam from softening the bottom). Serve immediately while still hot and shatteringly crisp.

Oven-Only Method

If you do not have an air fryer, place the assembled rolls on a parchment-lined baking sheet 1 inch apart. Brush lightly with oil. Bake at 400°F (200°C) fan-forced (or 425°F conventional) for 12 to 15 minutes, turning halfway, until deep golden and crisp. The texture will be slightly less shattery than the air-fryer version but still very good.
