What Is Penne Alla Vodka?

Penne alla vodka is a creamy pasta dish of penne tossed in a salmon-pink sauce built from crushed San Marzano tomatoes, heavy cream and a measured splash of vodka. Born of Italian-American restaurant culture, it is rich, tomatoey and subtly bright: the vodka cooks off, leaving no boozy taste while unlocking the flavor of the tomatoes. Step 1: Cook the Pasta

Bring a large pot of generously salted water to a boil. Cook penne until firmly al dente (about 1 minute less than package directions). Reserve 1 cup of pasta water before draining.

Step 2: Render the Bacon

While the pasta cooks, warm the olive oil in a large skillet over medium heat. Add the diced bacon or pancetta and cook until crispy and the fat has rendered — about 5-6 minutes.

Add the finely diced onion and cook until translucent, about 3 minutes.

Step 3: Deglaze with Vodka

Pour in the vodka — it will sizzle dramatically. Let it cook until reduced by half, about 2-3 minutes. The alcohol cooks off, leaving behind a subtle warmth that enhances the tomatoes.

Step 4: Build the Sauce

Stir in the crushed tomatoes. Reduce heat to low and simmer for 5 minutes, stirring occasionally.

Pour in the heavy cream and stir until the sauce turns a beautiful salmon-pink color. Season with salt and pepper.

Step 5: Combine

Add the drained pasta directly to the sauce. Add 1/2 cup of reserved pasta water and the grated Parmigiano. Toss vigorously for 30-45 seconds — the starch and cheese will create a silky, clingy sauce that coats every piece of pasta.

If the sauce is too thick, add more pasta water a splash at a time.

Step 6: Serve

Divide among warm bowls. Garnish with fresh parsley and extra Parmigiano.
