Made famous by Italian actress Maria Grazia Cucinotta, this spaghetti alla mediterranea lets cherry tomatoes — the sweeter and riper, the better — be the undisputed star. The tomatoes are halved, simmered covered in olive oil until they break down into a rustic, jammy sauce, then tossed with al dente pasta and fresh basil. It is a celebration of summer in a bowl, and it works brilliantly with spaghetti or short pasta like ziti or candela. A small pinch of sugar or a splash of milk can tame any lingering acidity, though truly ripe tomatoes rarely need the help.

Step 1 — Wash and halve the tomatoes (10 min)

Wash the cherry tomatoes thoroughly and pat them dry. Cut each tomato in half lengthwise. If the tomatoes are on the larger side, quarter them so they break down evenly. Use a sharp knife to avoid crushing the flesh.

Step 2 — Cook the tomatoes (15 min)

Heat a generous glug of extra-virgin olive oil in a large skillet over medium heat. Add the halved cherry tomatoes in a single layer (work in batches if needed) and season with salt. Cover the pan and cook, shaking occasionally, until the tomatoes soften and release their juices — about 12–15 minutes. The lid traps steam, which gently collapses the tomatoes without burning. If you prefer a chunkier sauce, uncover for the last 3 minutes to let some liquid evaporate.

Step 3 — Boil the pasta (10 min, concurrently)

While the tomatoes cook, bring a large pot of generously salted water to a boil. Cook the pasta until al dente according to package directions.

Step 4 — Combine and serve (2 min)

Drain the pasta, reserving a splash of pasta water. Add the pasta directly to the pan with the cooked tomatoes. Toss well over medium heat, adding a tablespoon or two of reserved pasta water if needed to create a silky sauce that coats each strand. The starches in the pasta water help the sauce cling to the pasta beautifully. Serve immediately, garnished with fresh basil leaves.

Step 5 — Fix acidity if needed (optional)

Taste the finished dish. If the sauce tastes too acidic, add one of the following: ½ teaspoon milk, a small knob of butter, a grating of fresh nutmeg, or a pinch of sugar. Stir through and taste again.
