Japanese Ponzu

A bright, citrusy Japanese sauce — soy sauce, rice vinegar, mirin, and citrus juice (yuzu, lemon, or lime), perfect for dipping gyoza, shabu-shabu, sashimi, or as a salad dressing.

¼ cup (60 ml) soy sauce
3 tbsp fresh lemon or yuzu juice
2 tbsp mirin
1 tbsp rice vinegar
1 tsp bonito dashi granules (optional)
½ tsp sugar

Preparation

  1. Combine all ingredients in a small bowl. Whisk until sugar dissolves. If using dashi granules, let steep for 5 minutes, then strain. Refrigerate for up to 2 weeks.
