A sweet-spicy Korean glaze — gochujang, honey, soy sauce, garlic, and sesame oil, reduced to a glossy, lacquer-like finish for grilled chicken, pork ribs, tofu, or roasted vegetables.

3 tbsp gochujang (Korean chili paste)
2 tbsp honey
1 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp sesame oil
2 garlic cloves, minced
1 tsp grated ginger

Preparation

  1. Whisk all ingredients together in a bowl until smooth. Use as a marinade or brush onto grilling meat in the last 5 minutes of cooking. For a thicker glaze, simmer in a small saucepan for 3 to 4 minutes until reduced by a third.
