A fiery green Yemenite hot sauce — fresh cilantro, jalapeños or serranos, garlic, cumin, cardamom, and olive oil, blitzed into a vibrant, spicy paste that wakes up everything it touches.

2 cups (60 g) fresh cilantro, leaves and tender stems
4 jalapeños or serranos, seeded if desired
4 garlic cloves
1 tsp ground cumin
½ tsp ground cardamom
½ tsp salt
¼ cup (60 ml) fresh lemon juice
½ cup (120 ml) olive oil

Preparation

  1. Combine cilantro, chilies, garlic, cumin, cardamom, and salt in a food processor. Pulse until finely chopped. Add lemon juice and olive oil. Process until a smooth, bright green paste forms. Refrigerate for up to 2 weeks.
