A thin, tangy Texas-style basting sauce for smoked brisket and beef — beef broth, vinegar, Worcestershire, butter, and spices, mopped onto meat during smoking to build layers of flavor.

2 cups (480 ml) beef broth
½ cup (120 ml) apple cider vinegar
¼ cup (55 g) unsalted butter
2 tbsp Worcestershire sauce
1 tbsp brown sugar
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
½ tsp cayenne
1 tsp salt

Preparation

  1. Combine all ingredients in a saucepan. Bring to a simmer over medium heat. Reduce heat to low and cook for 10 minutes. Use warm as a mop sauce for brisket or beef ribs. Refrigerate for up to 2 weeks.
