Instructions
- Sauté the garlic — In a large pan, heat the olive oil over medium heat and sauté the garlic cloves until fragrant (about 1 minute).
- Cook the tomatoes — Add the halved cherry tomatoes and cook for 3 minutes, stirring occasionally.
- Add the salmon — Cut the smoked salmon into strips or pieces, add to the pan, and cook for 1 minute.
- Deglaze with wine — Pour in the white wine and let it cook off for about 2 minutes.
- Optional cream — Stir in a splash of heavy cream if desired for a richer sauce. Season with salt and pepper.
- Cook the pasta — Meanwhile, boil the pasta in salted water until al dente. Drain, reserving a little pasta water.
- Toss and serve — Add the drained pasta to the pan and toss well with the sauce. Finish with chopped parsley and serve immediately.
Notes
- This recipe takes its name from Mare Fuori, the popular Italian TV series — a quick, resourceful pasta that uses pantry ingredients.
- The cream is optional; the dish is perfectly delicious without it.
