À la meunière ('in the style of the miller's wife') is one of the great French preparations: a delicate fillet of fish, lightly dredged in flour, pan-fried in butter, and finished with a simple sauce of brown butter, lemon, and parsley. The sauce itself is the star — the butter is cooked just until it turns a light hazelnut brown, developing a deep, nutty aroma that pairs perfectly with the bright acidity of fresh lemon and the clean, grassy notes of parsley. It is the classic preparation for sole meunière, but also works beautifully with trout, flounder, or any delicate white fish. The entire dish, sauce included, comes together in under 10 minutes.

Preparation

  1. Brown the butter: Melt butter in a small skillet over medium heat. Cook, swirling frequently, until the butter turns a light hazelnut brown and smells nutty — about 2 to 3 minutes.
  1. Add lemon: Immediately remove from heat and stir in lemon juice (it will sizzle and bubble vigorously).
