For finishing
In a large bowl, combine the flour, instant yeast, and salt. Add the warm water and olive oil. Mix with a wooden spoon until a shaggy mass forms, then turn onto a lightly floured surface and knead until smooth and elastic — about 6 to 7 minutes. The dough should feel soft, supple, and slightly tacky but not sticky.
Place the dough in a lightly oiled bowl and cover tightly with plastic wrap or a damp kitchen towel. Set the SilverCrest multicooker to Keep Warm for 20 minutes, then turn it off. Place the covered bowl inside the multicooker and close the lid. Let the dough rest for 20 minutes total — the residual warmth accelerates rising without overheating. The dough should nearly double in size.
No SilverCrest? Place the covered bowl in a turned-off oven with the light on, or in a warm (not hot) spot in your kitchen. Proofing time may extend to 30–40 minutes.
Turn the risen dough onto a lightly floured work surface. Roll the dough into a large, very thin rectangle — about 3–4 mm (⅛ inch) thick. The thinner the dough, the crispier the crackers. Using a chef's knife or bench scraper, cut the dough into long, narrow strips roughly the width of a pencil (about ¼ inch / 6 mm wide).
Take each strip and gently roll it between your palms or on the work surface to form a long, thin, rounded breadstick. The finished stick should be about the thickness of a drinking straw — err on the side of thinner rather than thicker.
Transfer the shaped sticks to a parchment-lined baking sheet, leaving a small gap between each one. Let them rest, uncovered, for 10 minutes at room temperature. This allows the gluten to relax and prevents shrinkage during baking.
Preheat the oven to 190°C / 375°F (convection / ventilated setting). Lightly brush each stick with a thin coat of water — this helps the seasonings adhere. In a small bowl, combine the fine salt, sesame seeds, garlic powder, and paprika. Sprinkle this mixture evenly over the brushed sticks.
Bake in the preheated oven for 20–25 minutes, rotating the sheet halfway through. The crackers are done when they are deep golden, completely dried through, and snap cleanly when broken — no softness or bend should remain. They will continue to crisp slightly as they cool.
The secret: these are more cracker than bread. They must be baked bone-dry. If they bend rather than snap, return them to the oven for 3–5 more minutes.
Transfer the crackers to a wire rack and cool completely — about 15 minutes. They become their crispiest once fully cooled.
