Mornay sauce is what happens when you take a perfectly smooth béchamel and stir in good melted cheese — it transforms from a simple white sauce into something luxurious, nutty, and golden. Named after the Duc de Mornay, it is one of the most useful sauces in the French repertoire: use it to bind a croque monsieur, blanket a cauliflower gratin, or make the grown-up mac and cheese that will haunt your dreams. The choice of cheese matters: Gruyère provides nuttiness and superior melting, while Parmigiano adds sharp, salty depth. A pinch of nutmeg is the traditional finishing touch.

Preparation

  1. Make the roux: Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 to 2 minutes until pale and foamy — do not let it brown.
