Despite the name, no seafood is used; instead, cherry tomatoes, garlic, chili, and olive oil create a briny, aromatic sauce that mimics the spirit of a classic spaghetti alle vongole. The key technique is the risottata method, where undercooked tagliolini finish cooking directly in the pan with the sauce, absorbing every drop of flavor. Fresh egg tagliolini, with their delicate texture and golden hue, are the ideal vehicle for this light yet intensely savory preparation. Step 1 — Prepare the Ingredients (5 min)

Halve the cherry tomatoes lengthwise. Thinly slice the fresh chili. Peel and lightly crush the garlic clove. Finely chop the parsley.

Step 2 — Cook the Sauce (10 min)

Heat the olive oil in a large skillet over medium heat. Add the garlic and chili; sauté for 1 minute until fragrant. Add the cherry tomatoes and a pinch of salt. Drain, reserving a ladle of pasta water, and add the pasta to the skillet with the sauce. Add a splash of pasta water and finish cooking over medium-high heat, tossing frequently (risottata method), until the pasta is al dente and well coated. Add more pasta water if needed for a silky consistency. Toss in the parsley, give it a final stir, and serve immediately.
