A fresh, bright Argentine salsa — diced tomatoes, onion, bell pepper, parsley, olive oil, vinegar, and oregano, similar to a chunky vinaigrette. The essential accompaniment to grilled steak (asado) in Argentina.

1 white onion, finely diced
1 red bell pepper, finely diced
¼ cup (60 ml) extra-virgin olive oil
¼ cup (60 ml) red wine vinegar
½ cup (15 g) fresh parsley, chopped
1 tsp dried oregano
1 garlic clove, minced
Salt and black pepper

Preparation

  1. Combine diced tomatoes, onion, and bell pepper in a bowl. Add olive oil, red wine vinegar, parsley, oregano, and garlic. Season with salt and pepper. Stir well. Let rest at room temperature for at least 30 minutes before serving for flavors to meld.
