Spaghetti alla Carrettiera — "carrettiera" means "cart driver" — is the ultimate peasant dish, born on the carts that carried goods across the Sicilian countryside. The driver carried dry pasta, garlic, olive oil, and stale bread, and when hunger struck, he'd boil the pasta over a campfire, fry the garlic in generous olive oil, toss the pasta with whatever he had (anchovy, chili, or simply just garlic and oil), and top it with toasted breadcrumbs (the "poor man's Parmigiano") made from the last of his bread. The modern version has many variations — with anchovy, with tomato, with sardines — but the essence is the same: a quick, bold, garlicky pasta that comes together in 15 minutes with pantry staples. The toasted breadcrumbs add a nutty crunch that contrasts with the tender pasta. It's fast, it's furious, and it's the kind of food that makes you understand why Sicily has been the crossroads of Mediterranean cuisine for 3,000 years.
