Step 1: Brown the Meat

Spray a large skillet with olive oil and set over medium-high heat. Add the ground beef and 3/4 teaspoon salt. Cook, breaking the meat apart, until mostly browned — about 3-4 minutes.

Add the onion, garlic, remaining salt, and Italian seasoning. Continue cooking until the onion softens, about 3 minutes more.

Step 2: Build the Sauce

Stir in both cans of crushed tomatoes. Bring to a simmer, then remove from heat. This is your lasagna sauce — it will finish cooking in the slow cooker.

Step 3: Make the Ricotta Layer

In a medium bowl, combine the ricotta, egg, and half the grated Parmigiano. Stir until smooth. Set aside.

Step 4: Layer in the Slow Cooker

Spread a thin layer of sauce (about 1 cup) on the bottom of the slow cooker.

Layer in this order, repeating 3 times:

  1. No-boil lasagna noodles — break to fit as needed
  2. Ricotta mixture — spread evenly (about 1/3 cup per layer)
  3. Shredded mozzarella — generous handful
  4. Meat sauce — enough to cover

Finish with a final layer of noodles, remaining sauce, and all remaining mozzarella and Parmigiano on top.

Step 5: Cook

Cover and cook on Low for 4-6 hours or High for 2-3 hours. The lasagna is done when the noodles are tender and the edges are bubbling.

Pro tip: If the top looks pale after cooking, switch to Warm and let it rest 20 minutes — the carryover heat firms up the layers for cleaner slices.

Step 6: Rest & Serve

Turn off the slow cooker and let the lasagna rest, uncovered, for 15-20 minutes before slicing. This is essential — it prevents the dreaded "lasagna landslide" on the plate.

Garnish with fresh basil.
