Lasagna alla Bolognese is the definitive baked lasagna of Bologna: paper-thin sheets of egg pasta layered with slow-cooked ragù Bolognese, creamy béchamel and Parmigiano-Reggiano, then baked until golden. Unlike the ricotta-heavy American version, the classic uses béchamel and a meat ragù simmered for hours. It is built over hours and perfected over centuries.

Lasagna alla Bolognese is not the heavy, ricotta-laden, mozzarella-draped casserole familiar to much of the world. The true Bolognese version is a study in elegance: delicate green spinach pasta (or traditional egg pasta), a slow-simmered ragù of finely minced beef and pork with a touch of tomato, a silky béchamel sauce, and nothing else but Parmigiano-Reggiano. No ricotta. No mozzarella. No oregano. The magic is in the layers — thin enough that each strata coheres as you cut through, the ragù and besciamella melding into a single, velvety whole. This is a weekend project, but every minute of the ragù's three-hour simmer is time well spent. Serve it as a primo for a special Sunday dinner, and watch your guests fall silent.

📋 Preparation

  1. Make the ragù — heat olive oil in a heavy pot over medium heat. Add the minced carrot, celery, and onion (the soffritto) and cook until soft and golden, about 8 minutes.
  1. Brown the meat — add the beef and pork, breaking it up with a wooden spoon. Cook until no longer pink and starting to brown, about 8 minutes.
  1. Deglaze — pour in the wine and let it evaporate completely, stirring to scrape up the brown bits.
  1. Simmer — add the passata, tomato paste, and a pinch of salt. Reduce heat to the lowest simmer, cover partially, and cook for 2½ hours, stirring every 20 minutes. Add the milk in the last 30 minutes.
  1. Make the besciamella — melt the butter over medium heat, whisk in the flour, and cook for 2 minutes (don't brown). Add the milk gradually, whisking constantly, until smooth and thickened (about 8 minutes). Season with nutmeg and salt.
  1. Boil the pasta — if using fresh lasagna sheets, blanch them in salted water for 30 seconds. Lay them flat on kitchen towels.
  1. Layer — spread a thin layer of besciamella in a 30x20cm baking dish. Layer: pasta → ragù → besciamella → Parmigiano. Repeat 4-5 times, finishing with besciamella and a generous Parmigiano crust.
  1. Bake — 180°C (350°F) for 35-40 minutes until golden and bubbling. Rest 10 minutes before slicing.
