This is the Milanese risotto, upgraded with a chef's trick: a silky yellow Parmesan cream — made with rice flour for extra smoothness — is spread on the bottom of each plate, the saffron risotto is spooned over it, and a crisp Parmesan wafer (cialda) leans on top. Crumbled sausage adds a rustic, savory counterpoint. The rice-flour béchamel makes the cream impossibly silky, and the wafers give that shattering crunch. It's a dish that looks like a restaurant's and tastes even better.

Ingredient notes: The cream is a bechamel made with rice flour — that's the trick for extra silkiness. The wafers are simply grated Parmigiano melted into crisp discs in a nonstick pan. Ground sausage (salsiccia) is crumbled and browned; any good Italian sausage works.

  1. Make the wafers (5 min). In a nonstick skillet, scatter 20 g of grated Parmigiano in a round shape. Cook over medium heat until it bubbles and sets, then flip carefully and crisp the other side. Repeat for 4 wafers.
  2. Brown the sausage (3 min). In the same skillet, crumble and cook the ground sausage until browned. Set aside.
  3. Start the risotto (2 min). Heat a drizzle of oil in the pot, add the rice, and toast for a minute. Begin adding broth, one ladle at a time.
  4. Make the cream (5 min). Melt the butter in a small pan, whisk in the rice flour, then add the warm milk, stirring until thickened. Off the heat, stir in the Parmigiano quickly.
  5. Finish the risotto (5 min). When the rice is cooked, stir in the saffron and manteca with butter.
  6. Plate (3 min). Spread the Parmesan cream on the bottom of each plate, spoon the risotto over it, and top with the crumbled sausage and a Parmesan wafer.
