Saffron risotto is the gold standard of the Italian risotto family — and the base of the legendary risotto alla Milanese. Saffron is added early, so its color and aroma permeate every grain, turning the risotto a beautiful golden yellow. Garlic and onion build the soffritto, white wine adds brightness, and a simple mantecatura of butter and Parmigiano brings it to a silky finish. Elegant enough for a holiday table, simple enough for a Tuesday.

Ingredient notes: Saffron comes in sachets of ground powder or in strands (pistils). Using both — as this recipe does — gives maximum color and aroma. For the deepest flavor, steep the strands in a few tablespoons of hot broth for 10 minutes before adding.

  1. Warm the broth (5 min). Heat the vegetable broth and keep it hot. If using saffron strands, steep them in a few tablespoons of hot broth for 10 minutes.
  2. Soffritto (3 min). Melt 1 tbsp of butter in a large saucepan. Soften the minced garlic and finely chopped onion until translucent.
  3. Toast the rice (3 min). Add the rice and toast, stirring, until the grains turn translucent.
  4. Deglaze (2 min). Pour in the white wine and let it reduce almost completely.
  5. Add the saffron (1 min). Stir in the saffron (powder and/or steeped strands with their liquid) so the color spreads through the rice.
  6. Cook the risotto (20 min). Add the hot broth a little at a time, stirring often, keeping the rice just covered. Cook over low heat until creamy and al dente.
  7. Manteca (2 min). Off the heat, stir in the remaining butter and the Parmigiano. Season with salt and pepper and serve.

Why is saffron so expensive?

Each flower yields only three stigmas, harvested by hand — but a little goes a long way. A sachet or pinch is all a risotto needs.

Ground or strands?

Both work; this recipe uses both for maximum color and aroma. Steep strands in hot broth for the deepest result.

Is this the same as risotto alla Milanese?

Almost — Milanese adds bone marrow to the soffritto. This is the simple golden base; add marrow for the full Milanese.

Can I make it without garlic?

Yes — a pure onion soffritto is also traditional. The garlic adds depth but isn't essential.

What rice should I use?

Carnaroli is ideal for its high starch and firm grain. Vialone Nano and Arborio also work.
