This risotto captures autumn in a bowl: pomegranate seeds are juiced to create a vibrant, tart-sweet cooking liquid, while the reserved seeds are stirred in at the end so they pop with freshness against the creamy rice. A ginger-scented homemade broth, Tropea onion (including its green top), and rosé wine complete the picture. The color is a soft pink, the flavor bright and slightly tangy — and the technique of juicing your own pomegranate makes all the difference.

Ingredient notes: Two pomegranates — one for juice, one for seeds. Rosé wine is the recipe's choice because its color matches the pomegranate's pink. The broth is homemade with ginger for a subtle warmth. Tropea onion, green top included, gives a sweeter, milder base.

  1. Make the ginger broth (45 min). Wash and cut the onion, carrots, celery, and potato. Put them in a medium pot with about 1 quart (1 L) of water, the oil, a pinch of pepper, a little salt, and the peeled ginger. Bring to a boil, lower the heat, cover, and cook 40-45 minutes.
  2. Prep the pomegranates (10 min). Peel and seed both pomegranates, working gently to avoid splashing. Reserve the seeds of one for garnish. Process the other's seeds in a food processor and strain through a fine-mesh strainer to extract the juice, discarding the seed bits.
  3. Soffritto (5 min). Slice the Tropea onion, including the green part, not too fine. Sauté it in olive oil in a heavy-bottomed pan over medium heat until golden.
  4. Toast the rice (2 min). Add the rice and toast at least 1 minute.
  5. Deglaze (2 min). Pour in the wine and let it evaporate perfectly — a risotto that tastes of raw wine is no good.
  6. Cook with pomegranate juice (3 min). Once the wine has evaporated, pour in the pomegranate juice, stir, then immediately add 2-3 ladles of hot broth so the cold juice doesn't interrupt the cooking.
  7. Finish (15 min). Continue adding broth as usual. One minute before the rice is done, add the reserved pomegranate seeds and stir to flavor.
  8. Manteca (2 min). When cooked (taste — don't trust the package time), add the butter and Parmigiano off the heat and stir to melt. Rest 1-2 minutes and serve.
