Step 1: Prepare the Eggplant

Trim the eggplants and cut into ½-inch (1 cm) cubes — no need to salt and purge, the high-heat cooking concentrates their flavor. You should have about 5-6 cups of cubes.

Step 2: Sear the Eggplant

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add 2 smashed garlic cloves and cook until fragrant, about 30 seconds.

Add the cubed eggplant in an even layer — work in batches if necessary to avoid crowding. Cook undisturbed for 3-4 minutes to develop a deep golden crust, then toss and continue cooking until the eggplant is tender throughout and golden on all sides, about 8-10 minutes total.

Discard the garlic cloves. Transfer the eggplant to a bowl and set aside.

Step 3: Make the Tomato Sauce

In a medium saucepan, warm 2 tablespoons of olive oil over medium heat. Add the remaining 2 smashed garlic cloves and cook until golden and fragrant, about 1 minute.

Pour in the passata, season with salt, and add the basil leaves. Bring to a gentle simmer, then reduce the heat to low. Cook for 15 minutes, stirring occasionally, until slightly thickened. Discard the garlic cloves.

Step 4: Cook the Pasta

Meanwhile, bring a large pot of generously salted water to a boil. Cook the pasta until firmly al dente — about 2 minutes less than package directions — since it will finish cooking in the oven. Reserve ½ cup of pasta water before draining.

Step 5: Assemble

Drain the pasta and transfer it directly to the saucepan of tomato sauce. Toss to coat every piece.

Fold in the seared eggplant (reserving about ½ cup for the topping) and the cubed mozzarella. If the mixture seems dry, add a splash of the reserved pasta water.

Transfer everything to a 9×13-inch baking dish and spread into an even layer.

Step 6: Top and Bake

Scatter the remaining mozzarella cubes over the surface, followed by the grated Grana Padano. Dot with the reserved eggplant cubes.

Place the dish under a preheated broiler at 240°C (475°F) on the top rack and bake until the cheese is melted, bubbly, and golden brown — about 10 minutes. Watch closely to prevent burning.

Step 7: Serve

Let rest for 5 minutes — this sets the casserole so it doesn't collapse into a soupy mess when portioned. Garnish with fresh basil and serve warm or at room temperature, directly from the baking dish.
