This is pistachio in its purest form: the famous green pistachios of Bronte, Sicily — the only pistachios in Italy with DOP status — are blanched, peeled, and blended with olive oil into a brilliant green cream. Half goes into the rice as it cooks; the rest is mantecato in at the end. Vialone Nano rice, a shallot, vegetable broth, a drop of lemon, and a shower of crushed pistachios complete the picture. Simple, luxurious, and unmistakably Sicilian.

Ingredient notes: Bronte pistachios are small, intensely green, and sweet — the finest in the world. If unavailable, use the best-quality green pistachios you can find. The cream needs to be vivid green, so don't over-blend until it turns pale.

  1. Blanch and peel the pistachios (10 min). Shell the pistachios, then blanch them in boiling water a few minutes. Drain, dry with a towel, and rub them together — the skins will come off.
  2. Make the pistachio cream (5 min). Transfer to a blender and blend, adding the olive oil in a thin stream, until you have a very green cream. Season with a pinch of salt.
  3. Soften the shallot (4 min). In a saucepan, stew the minced shallot with a drizzle of oil until soft.
  4. Toast and flavor (3 min). Add the rice and toast a few minutes. Stir in 50 g of the pistachio cream and let it flavor the rice. Optionally deglaze with a splash of white wine.
  5. Cook the risotto (15 min). Add the hot vegetable broth gradually, stirring often, and cook about 15 minutes until al dente.
  6. Manteca (2 min). Off the heat, mantecare with the remaining pistachio cream. Adjust seasoning and add the drop of lemon juice.
  7. Serve (2 min). Plate and sprinkle with the crushed pistachios.
