Herb Rice with Chicken

⏱️ 10 min🍳 15 min⏱️ 25 min📊 Easy🍽️ 2Volume 3 · Risotto & Rice

A fragrant one-pan meal — ground chicken browned with onion and garlic, quick-cook rice tossed with lemon zest, juice, and a shower of dried Italian herbs. Express cooking with a sunny lemon flavor.

AmountIngredient
8¾ oz (250 g)ground chicken
1organic lemon
1garlic clove
1onion
8¾ oz (250 g)quick-cook long-grain rice
¾ tspsalt
2 tbspdried herb mix (pizza herbs: oregano, thyme, marjoram)
1 tbspolive oil
black pepper

This is the fast track to a full dinner: ground chicken is sautéed until golden, then onion and garlic join the pan, followed by quick-cook rice, water, and the bright zest and juice of a whole lemon. A generous sprinkle of dried herb mix — the kind sold for pizza, packed with oregano and thyme — turns it fragrant. About 15 minutes of work, one pan, and dinner is ready.

Ingredient notes: Quick-cook (express) long-grain rice cooks in about 10 minutes — the recipe's whole point. The herb mix is the classic dried "pizza herbs" blend; any mix of oregano, thyme, and marjoram works. Ground chicken can be swapped for ground turkey or pork.

  1. Brown the chicken (5 min). Heat the olive oil in a nonstick skillet and sauté the ground chicken about 5 minutes, breaking it up.
  2. Add aromatics (3 min). Lower the heat, add the chopped onion and minced garlic, and sauté about 3 minutes. Season with salt and pepper.
  3. Add the rice (2 min). Add the rice, water, lemon juice, and lemon zest. Sauté about 2 minutes.
  4. Add the herbs (1 min). Stir in the dried herb mix.
  5. Finish (5-8 min). Cover and cook until the rice is tender and the liquid is absorbed, about 5-8 minutes. Fluff with a fork.
  6. Serve (1 min). Serve hot, with extra lemon wedges if you like.

What is "express" rice?

Quick-cook long-grain rice that's ready in about 10 minutes — perfect for weeknights. Adjust liquid if using regular rice.

What herbs should I use?

The original uses a dried "pizza herbs" mix — oregano, thyme, and marjoram. Any blend of these works.

Can I use ground turkey or pork?

Yes — both work beautifully in place of ground chicken.

Can I make it without lemon?

The lemon is the star — but lime zest and juice make a great substitute.

Is this gluten-free?

Yes, as written — check your herb mix for additives.
