279 — Gratinated Bread Gnocchi

Stale bread500 g (1 lb)
Milk500 ml (2 cups)
Eggs2, lightly beaten
Parmesan cheese100 g (1 cup), grated
Nutmeg½ tsp, freshly grated
Salt½ tsp
Butter2 tbsp, plus extra for greasing
Breadcrumbs3 tbsp

Instructions

  1. Break the stale bread into small pieces and place in a large bowl. Pour the milk over the bread and let it soak for 30 minutes until completely softened.
  2. Squeeze the excess milk from the soaked bread (reserve the milk for another use) and transfer the bread to a clean bowl.
  3. Add the beaten eggs, grated Parmesan, nutmeg, and salt to the bread. Mix well until a uniform, sticky dough forms.
  4. Preheat the oven to 375°F (190°C). Butter a baking dish.
  5. With moistened hands, shape the bread mixture into small gnocchi-like ovals or quenelles.
  6. Arrange the gnocchi in the buttered baking dish in a single layer.
  7. Sprinkle the breadcrumbs evenly over the top, then dot with small pieces of the remaining butter.
  8. Bake for 20–25 minutes until golden brown and crisp on top.
  9. Serve hot, straight from the oven.
