These rolls are a beautiful collision of two worlds: the rustic Italian comfort of stuffed vegetables and the bright, savory-sweet flavors of an Asian pantry. The cabbage leaves are blanched until silky, then filled with sushi-style seasoned rice and pumpkin glazed with soy sauce and sugar, caramelized until it almost candies. A quick pan-sear gives the rolls a golden crust. Served with a little bowl of soy sauce for dipping, they're a stunning plant-based starter or light main.

Ingredient notes: Delica (or Hokkaido) pumpkin has a sweet, chestnutty flavor that caramelizes beautifully — butternut squash is a perfect substitute. The rice is cooked like sushi rice and dressed with sweetened vinegar, so it's important to let it cool completely before rolling.

  1. Blanch the cabbage (5 min). Separate the largest leaves from the head and blanch them in boiling water for a few minutes until pliable. Transfer to a bowl of ice water to set the bright color, then drain and dry on a rack.
