This is biryani for vegetable lovers: a colorful mix of peas, zucchini, carrots, cauliflower, and green beans marinated for an hour in yogurt with mint, cilantro, chilies, and a full spice cabinet. The rice is washed, scented with saffron, and briefly baked; then the rice and vegetables are layered in a baking dish and finished in the oven until everything is perfumed and tender. Ghee, cashews, and whole spices make it rich. A Ribolla Gialla, as the original suggests, pairs beautifully.

Ingredient notes: The vegetables marinate in spiced yogurt for a full hour — this is the flavor base. Ghee is traditional; butter or neutral oil substitute well. Cashew powder adds creaminess; ground almonds work. Serve decorated with fresh herbs and almond slivers.

  1. Make the marinade (5 min). In a bowl, combine the yogurt, mint, cilantro, chilies, garlic, ginger, and cumin. Mix well.
  2. Marinate the vegetables (1 hr). Cut the vegetables into small pieces, add to the marinade, and let rest 1 hour.
  3. Start the soffritto (10 min). Melt the ghee in a skillet with the cashew powder, cinnamon, cardamom, cloves, salt, and sliced onion. Cook over very low heat.
  4. Cook the vegetables (6 min). When the onions are translucent, add the marinated vegetables and cook over medium heat 6 minutes so the spices flavor them.
  5. Cook the rice (8 min). Wash the rice in cold water, place it in a pot with the saffron, cover with 2½ cups (600 ml) of boiling water, and cook sealed in an oven preheated to 340°F (170°C) for 8 minutes.
  6. Layer and bake (10 min). Spread the rice in a baking dish, arrange the vegetables on top, cover with parchment paper, and bake at 300°F (150°C) for 10 minutes.
  7. Serve (2 min). Serve hot, decorated with fresh herbs and thin almond slivers.
