Sarma (or dolma) is one of the great rice dishes of the Eastern Mediterranean: grape vine leaves, blanched until pliable, are rolled around a filling of rice slowly cooked with onion, pine nuts, raisins, mint, and allspice. The little rolls are packed in a pot, drizzled with lemon and olive oil, and simmered gently until the rice is tender and the leaves silky. Served warm or cold, with yogurt or a garlic-lemon sauce.

Ingredient notes: Brined vine leaves need a rinse; fresh leaves need a quick blanch in salted water. The filling is partially cooked before rolling — this is what makes the rolls tender and flavorful. Tarragon is the aromatic secret; substitute a pinch of dried dill if needed.

  1. Prep the leaves (10 min). Rinse the vine leaves and blanch them briefly in salted water. Drain and set aside.
  2. Start the filling (10 min). Heat ½ cup of olive oil in a skillet. Finely chop the onions and sauté until transparent.
  3. Cook the rice (10 min). Add the rice and mix well. Pour in 1 cup of hot water, cover, and cook over low heat until the rice absorbs the water.
  4. Season (2 min). Add the pine nuts, raisins, salt, pepper, mint, allspice, and tarragon. Mix well and remove from the heat.
  5. Roll the sarma (15 min). Place a small amount of filling on each leaf, fold the sides in, and roll up tightly.
  6. Arrange and cook (40-50 min). Pack the rolls in a large pot. Squeeze the lemon juice over, add 4 tbsp of olive oil, and pour in 1½ cups of hot water. Cover and cook over low heat 40-50 minutes, until the rice is fully cooked.
  7. Serve (2 min). Serve warm or cold, with yogurt or a garlic-lemon sauce.
